With the cooler weather coming in, there is nothing like a warm comforting breakfast. To be honest I have never been the biggest fan of oatmeal bowls but when you add chocolate everything is delicious. That’s the secret! I love this recipe because you actually make an overnight oat version so all you really have to do is warm it up in the morning.
I love the sesame seed brittle, breakfast bowls always need a crunch factor and this is it. Sesame seeds are one of the top sources of calcium making it the perfect addition to any breakfast.
The toppings are the best part, and put your fav’s on top of your bowl. I drizzled my bowl with creamy peanut butter, chia jam, the brittle and caramelized banana with a touch of cinnamon. I added another dark chocolate square because why not! Chocolate naturally has some caffeine so it is a welcome addition on those sleepy mornings.
3/4 of cup + 1 tbsp of unsweetened vanilla almond or oat milk
1 tsp of cacao powder
1 tsp of maple syrup
1/8 tsp of cinnamon
1 banana, half mashed, half sliced into rounds
Cinnamon to dust
1/2 tbsp of coconut oil
1/2 tbsp of honey
3 tbsp of toasted sesame seeds
2 tbsp of crushed walnuts
1/8 tsp of nutmeg
2 square of 70% of dark chocolate
Hemp hearts (topping option)
1 tbsp of peanut butter (topping option)
Chia jam (topping option)
In a bowl add the cacao powder and slowly whisk in 3/4 cup of dairy-free milk. Add cinnamon and 1 tsp of maple syrup and whisk until no clumps. Add the chia and rolled oats. Stir well. Cover and let it sit overnight in the fridge.
The next day, mash half of the banana in a small pot, add the chia oat mixture along with 1 tbsp of dairy free milk. Warm up on medium-low heat. In a separate skillet, add the coconut oil and honey. Once melted, add toasted sesame seeds, crushed walnuts and ⅛ of nutmeg. Stir and shift to one side of the pan. On the other side add the remaining half of the banana slices and dust with cinnamon. Cook for 3 – 4 minutes, flip halfway. At the same time mix around the sesame brittle mixture. Remove from heat.
When the chia mixture is warm, add 1 square of dark chocolate. Stir in until melted. Remove from heat and place in a bowl. Top with the caramelized banana, sesame seed brittle, 1 square of dark chocolate, dollop of peanut butter, chia ham and a sprinkle of hemp hearts or whatever your favourite toppings are.
