Super Seed Granola Bar, School Safe,

Super Seed Granola Bars

Granola bars make such a great snack and I was on a quest to create an ultra-healthy granola bar that I could eat as a nutritious breakfast or snack. This bar is that and more, plus it’s school-safe!

These granola bars have a great mix of superfood seeds, essential fatty acids (omega-3 and 6) and a nice blend of complex carbohydrates, protein and fat.  The banana is a great way to add natural sweetness to these granola bars too. I also had to throw in some chocolate chips and dried fruit because let’s get serious, you have to balance out all those healthy ingredients. I used dark chocolate dairy-free chocolate chips.

Super Seed Granola Bar, School Safe,

Below are some of the key ingredients which makes these granola bars oh so good for you.

Hemp Hearts: They are a blend of both essential fatty acids,  linoleic acid (omega-6) and alpha-linolenic acid (omega-3). They also contain gamma-linolenic acid (GLA) which can be especially beneficial for women’s health.

Sunflower Seeds: They are a good source of B-complex vitamins and antioxidants like Vitamin E, which help neutralize free radicals in the body. They are also a good source of magnesium, selenium and essential fatty acids.

Pumpkin Seeds: They are rich in omega-3’s and minerals like manganese, magnesium and zinc. They also have natural anti-microbial properties, which include anti-fungal and antiviral benefits.

Chia Seeds: These are one of my favourite super seeds because they  are an amazing source of soluble fibre, antioxidants, and omega-3 fatty acids.

These granola bars can be stored in the fridge for up to a week or in the freezer for 1 – 2  months. I enjoyed them all week for breakfast or a snack. These may become a new fav!

  1. Preheat the oven to 325F.
  2. Mash the bananas in a bowl. Add the chia seeds, hemp hearts, maple syrup, and cinnamon to the banana mixture and let it sit.
  3. In a food processor, blitz the rolled oats until it is a mixture of finer and chunkier textures.
  4. In a large bowl, add the oats, cranberries, sunflower seeds, pumpkin seeds and chocolate chips. Pour the banana mixture overtop and add in the coconut oil. Mix until well combined. Add in the sea salt at the end. Taste test and add pinch more if desired.
  5. In a 12×12 baking dish place a piece of parchment paper to line it. Pour mixture into the dish and flatten with your fingers until the mixture is about ¼ inch in height.
  6. Bake for 20 -25 minutes. Let it cool then slice into bars.

If you don’t need to make these school-safe, feel free to sub the 1 1/2 cup of seeds and hemp hearts with your favourite nuts and seeds like cashews and almonds. Just chop them up and sub in.
