I love these potatoes that have a fun Indian flavour kick to them, making them an awesome side dish or part of a delish breakfast bowl. ⁠

Samosa Spiced Oven Potatoes

Samosa Spiced Oven Potatoes

Ingredients

  • 1 tsp of garam masala powder⁠
  • 1/2 tsp of cumin powder⁠
  • 1/4 tsp of coriander powder⁠
  • 1/4t sp of garlic powder⁠
  • 1/4 tsp of chili powder⁠
  • 1/8 tsp of turmeric powder⁠
  • 1/8 tsp of cardamom powder⁠
  • 1 1/2 tbsp of olive oil or avocado oil⁠
  • Sea salt and pepper to taste⁠
  • 4 – 5 Yukon gold potatoes⁠
  • Cilantro for garnish⁠ (optional)

Instructions

  1. Preheat the oven to 400 F.⁠
  2. ⁠In a small bowl make your spice mix by adding the garam masala, cumin, coriander, garlic powder, chili powder, turmeric and cardamom. ⁠
  3. ⁠Wash and chop your potatoes into cubes. Pat to dry. ⁠
  4. In a bowl add the potatoes and olive oil or avocado oil. Season them with sea salt and black pepper to taste. ⁠
  5. ⁠Add 1 1/2 tsp of the spice blend to the potatoes and mix.⁠
  6. ⁠Line a baking sheet with parchment paper, spread the potatoes evenly on the baking sheet. Drizzle with a bit more oil. Bake for 30 minutes or until the potatoes are golden brown. Stir halfway through. Serve and garnish with cilantro and additional sea salt if desired.⁠
