Today I am getting festive with this adorable pumpkin shaped and spiced energy bites. They are so easy to make in the food processor and full of healthy clean ingredients. Energy bites can be a fun meal prep snack to add to the rotation. They are usually sweet to satisfy your cravings but full of healthy fats from a variety of nuts and seeds to keep you satiated and energized.
I added a decent amount of pumpkin spice to these because I love warming spices but you can dial it down to your personal preference. If you don’t have a pumpkin spice recipe check out my recipe for A Slice of Pumpkin Spice for your own DIY mix.
These were fun to make and easy to shape into mini pumpkins. Just take a toothpick and lightly press the side of it down on the energy bite to make the grooves. I used half a pecan to make the stem
In a food processor add the pecans, almond flour, pumpkin seeds and coconut flakes. Pulse to combine into small pieces. Add the dates and pulse to combine until it stars getting smoother. Add the almond butter, pumpkin puree, 2 tsp of pumpkin spice and cinnamon. Pulse until a sticky texture forms that you can roll into balls.
In a separate bowl combine 2 tsp of pumpkin spice and maple sugar.
Roll the energy bites into 1 inch balls. It helps if your hands are slightly damp. After your balls are formed roll them in the pumpkin spice maple sugar mixture.
If you want to get fancy and shape them like pumpkins, press the edge of a toothpick against the sides to form grooves and stick a piece of pecan as the stem. Store in the fridge for up to a week.
