No Bake Chocolate Rice Crispy Squares

With Easter weekend coming up I was naturally craving something chocolaty. These No Bake Chocolate Rice Crispy Squares remind me of those chocolate easter bunnies I used to eat with the rice crisps inside. This takes you back to that but in a healthy way!⁠

No Bake Chocolate Rice Crispy Squares

There are just a few ingredients and you make everything in one pot. It’s an easy no bake recipe. ⁠You do store them in the fridge because of the coconut oil and chocolate and since you keep them stored in the fridge, these squares are more of a crispy and firmer treat, but so delicious!

No Bake Chocolate Rice Crispy Squares

Yield: 9 squares

No Bake Chocolate Rice Crispy Squares

Ingredients

  • 4 cups of brown rice crisps⁠
  • 1/3 cup of nut butter (peanut butter or almond butter)⁠
  • 1/4 cup of coconut oil⁠
  • 1/2 cup of honey⁠
  • 1/2 cup of dairy-free dark chocolate⁠
  • Pinch of sea salt⁠

Instructions

  1. In a pot on low heat, add the coconut oil, honey and dark chocolate. Once melted stir in the nut butter and then add in a pinch of sea salt. I like to use a whisk to get out all the clumps and stir until everything is melted and combined. ⁠
  2. Remove from heat and add in the brown rice crisps. Stir to combine.⁠
  3. ⁠Line a 9 x 9 baking dish with parchment paper, pour the rice crispy mixture in and press down with your hands. It can be a bit messy, but you can always add a sheet of parchment paper or cling wrap on top to press down. Place it in the fridge for 2 hours and then cut into squares. Keep it stored in the fridge. ⁠
