With Easter weekend coming up I was naturally craving something chocolaty. These No Bake Chocolate Rice Crispy Squares remind me of those chocolate easter bunnies I used to eat with the rice crisps inside. This takes you back to that but in a healthy way!
There are just a few ingredients and you make everything in one pot. It’s an easy no bake recipe. You do store them in the fridge because of the coconut oil and chocolate and since you keep them stored in the fridge, these squares are more of a crispy and firmer treat, but so delicious!
1/3 cup of nut butter (peanut butter or almond butter)
1/4 cup of coconut oil
1/2 cup of honey
1/2 cup of dairy-free dark chocolate
Pinch of sea salt
In a pot on low heat, add the coconut oil, honey and dark chocolate. Once melted stir in the nut butter and then add in a pinch of sea salt. I like to use a whisk to get out all the clumps and stir until everything is melted and combined.
Remove from heat and add in the brown rice crisps. Stir to combine.
Line a 9 x 9 baking dish with parchment paper, pour the rice crispy mixture in and press down with your hands. It can be a bit messy, but you can always add a sheet of parchment paper or cling wrap on top to press down. Place it in the fridge for 2 hours and then cut into squares. Keep it stored in the fridge.
