Mini Quesadillas

I am going to keep this post short and sweet. Let’s get serious, these mini quesadillas are adorable and they make the perfect after-school snack. There is just something so fun about eating anything in miniature size. 

They are super easy to make and you can whip up this snack in no time. The best part is that you can get creative and fill the mini quesadillas with whatever your heart desires.

I decided to make a sweet and savoury option. For the savoury, I used beetroot hummus with some avocado. As for the sweet option, I layered in some of my yummy Double Chocolate Avocado Dip with some slices of banana. Nut butter and banana also makes a fantastic combo.

  • 4 gluten-free tortillas
  • Hummus (I used a store-bought beetroot hummus)
  • 1 avocado, sliced into strips
  • 1 banana, sliced
  • Double Chocolate Avocado Dip (recipe on the blog)


  1. Using a medium circular (lid, cup or mug), create your mini tortillas by tracing around the cup with a knife to form mini 2-inch circles.
  2. Toast them lightly on a pan or toaster oven (do not use any oil).
  3. Cut the avocado in half and scoop it out with a spoon. Cut into slices.
  4. On a mini tortilla, spread it with hummus. Fold and place a slice of avocado in the middle. Make half the batch of tortillas like this.
  5. For the other tortillas, spread some Double Chocolate Avocado Dip or nut butter on the tortilla. Layer thin slices of banana on one side and fold.
