Ginger Cilantro Lime Corn Salad

It’s always fun coming with new side dishes during the summer. This salad is so fresh tasting with its delicious blend of cilantro, mint, ginger and lime over fresh veggies. This dressing is also amazing and I will definitely be using it on other salads. The good thing about this salad is that you can get creative and toss in any other fresh garden veggies to the mix. Red bell peppers and onion make a nice addition if you and your family enjoy those veggies.

As for the corn, this recipe calls for grilling it, however you can also prepare the corn in other ways. You can simply boil it or toss in some organic frozen corn on a skillet with some salt and pepper. You can make this as easy as you like. This salad is a good example of eating the rainbow with variety of colours like yellow, red and green. These provide you with a diverse profile of antioxidants and phytonutrients like lutein, lycopene, zeaxanthin and quercetin.

Ginger Cilantro Lime Corn Salad

Ingredients

  • 4 ears of corn on the cob, husks and silk removed
  • 1 large heirloom tomato or ½ cup of cherry tomatoes halved
  • 2 mini cucumbers
  • 3 radishes
  • ¼ cup of extra-virgin olive oil
  • 2 tbsp of lime juice
  • Zest of a whole lime
  • ½ inch piece of ginger grated
  • 1 clove of garlic
  • ½ cup of cilantro
  • A sprig of mint
  • ¼ tsp of raw honey
  • Sea salt to taste

Instructions

  1. Lightly season the corn with avocado oil, salt and pepper. Place on a grill for 10-12 minutes. You can also boil the corn if you don’t have access to a grill.
  2. While the corn is cooking, dice the tomatoes and cucumbers into small pieces and place in a bowl.
  3. Cut the radishes in half and cut into thin slices.
  4. To make the dressing, combine the olive oil, lime juice, lime zest, ginger, cilantro, mint, and honey. Blend well in a food processor or blender. Taste and add sea salt to preference.
  5. Once the corn is done, remove it from the grill and let it cool before cutting.
  6. Remove the corn from the cob using a knife and slice down vertically.
  7. Add the corn to the salad bowl. Season with sea salt and taste.
  8. Pour enough dressing on top to coat the salad and add any additional seasoning to taste.
  9. Place in the fridge to chill before serving.
