Beet, Carrot and Apple Detox Slaw

This is the ultimate detox slaw and it makes an awesome side dish for BBQ season. This slaw is on the sweeter side, which is why I paired it with a tangy dressing to really help balance it out.

I used my julienne blade on my food processor for the first time and I was amazed at how efficient it was…WOW! It sliced and diced everything in seconds. If you don’t have a food processor you can grate everything by hand with a box grater.

Beets are the star of this dish and if you haven’t tried beets before that have an earthy corn taste. Beets are a great blood cleanser and purifying superfood.

They are high in fibre, antioxidants and betaine, which helps support the liver in ridding your body of toxins.

They are also high in dietary nitrates which converts to nitric oxide, a powerful vasodilator. This helps your blood vessels expand and relax for optimal blood flow and blood pressure. If you haven’t used beets before, they can stain things, so use your not-so-favourite cutting board or a glass one when peeling your beets. Don’t forget to use the beet greens too which are a great source of vitamin K, your blood-clotting vitamin.

To help with the detox theme, I decided to add an apple which is high in pectin, a soluble fibre that helps your body remove cholesterol and toxins from your body. You can choose to use your favourite organic apple. Opt for a green apple if you like that sweet and sour vibe.

Finally, the dressing is made using lemon and apple cider vinegar to stimulate your digestive juices and get that liver working!

Beet, Carrot, and Apple Detox Slaw


  • 4 medium carrots
  • 1 apple
  • 2 non-GMO beets
  • 2 heaping tbsp of mint, finely chopped
  • 1 whole lemon zested
  • 2 tbsp lemon juice
  • 1 tbsp apple cider vinegar,
  • 3 tbsp olive oil
  • Sea salt to taste


  1. Grate the carrots, apple and beets using a food processor or a box grater
  2. Whisk the lemon zest, lemon juice, apple cider vinegar, olive oil and sea salt together
  3. Pour over slaw and mix to combine
  4. Top with chopped mint
